Mark McBagel

When I want a hearty breakfast, sometimes I make this open faced sandwich that my wife affectionately calls a “Mark McBagel”.

Here is this week’s version (per person):

1 bagel (I usually use Sesame)

1 Avocado

2 slices ham or Canadian bacon

2 slices tomato, or 6 cherry tomatoes, sliced in half

2 eggs, scrambled easy

2 slices of cheese (usually use Muenster; this time used Smoked Gouda – even better)

Pre-warm your toaster oven to 400.  If your bagel is frozen, just warm it enough to defrost.  Place fresh or defrosted bagel on foil on baking tray.  Spread avocado (ripe) on bagel, like you would cream cheese or butter.  Add ham or Canadian bacon.  Add tomato.  Scramble 2 eggs and cook until just barely set, about one minute.  Place egg on sandwich halves.  Top with sliced cheese.  Bake at 400 for about 4-5 minutes, until cheese is just beginning to bubble and brown.  Keep a watch or it will burn!  Enjoy

  2. Yum, looks good! When I have a sandwich (or bagel) crave I usually do swiss cheese and avocado, or tomato and melted cheddar, or scrambled eggs with melted cheddar (hey, anything goes with melted cheddar).
