More Zucchini Recipes!

Zucchini can be used in so many wonderful ways.  We had it roasted last night.  You can layer it in a lasagna (instead of the noodles).

The Zucchini Ricotta Fritter recipe (by Mario Batali) I posted a while back is one the most popular items I’ve ever posted, and lots of people have pinned it on pinterest and referred people here to that recipe.
