Caramelized Onions


I’ve posted my recipe for caramelized onions before, but this time I have step by step photos.
4 medium sweet onions (Vidalia, WallaWalla or Maui)
2 tbsp Olive Oil
2 tbsp Cider Vinegar
2 tbsp Brown Sugar
1 tsp salt
Pepper to taste (about 10 cranks of grinder)

Slice onions into thin rings.


Heat pan on medium high. Add olive oil. Add onions.

Using wooden spoon, break into individual rings.


Wilt onions, about 5 minutes.  Add vinegar, sugar, salt & pepper  Cook until liquid burns off.  Lower heat, and continue cooking until onions reach medium brown, about 30 minutes total cooking.  Turn out into a bowl to cool.  Use immediately in recipe, or freeze in plastic bag.  When you need to use some, just break off a piece, dice and throw into your dish, or put in as is.  They thaw and heat in dishes very quickly.
