If you are Jewish, you know what Gribenes is, and your grandmother probably cooked it whenever she made poultry.

If you aren’t Jewish, but you are a fan of the movie The Princess Bride, you may have always wondered what is so funny about the Billy Crystal line, “Never buy gribenes from a Mohel; too chewy.”

Well, here is a picture of gribenes, which is chicken or turkey skin, usually rendered in it’s own fat, until crispy. Known in refined circles, as turkey cracklings.

As part of our Thanksgiving gourmet leftover dinner, in which my personal challenge is to use as many leftovers as possible in non-Thanksgiving ways, I make gribenes as a crunchy salad topping. It always disappears!

By the way, for those who don’t know Yiddish, a Mohel is someone who performs ritual circumcisions. TMI? Just trying to help you figure out the joke!
