Curried Sweet Potato Latkes

Chanukah is almost here, and you know you need an alternative latke!

Everyone loves something different alongside the traditional potato latke, and these are the best!  We make them just about every year.

Ingredients (for 16-20 latkes)

Note:  I usually make double – these freeze well – reheat in toaster oven.

2 lbs sweet potatoes or yams
1 apple

½ onion (maya, maui, vidalia or other sweet style onion)
¼  cup milk
1/3 cup matzoh meal or flour
3 eggs (separated)
1 teaspoon baking powder
1 teaspoon curry (add more if you want more intense flavor)
¼  teaspoon cayenne
¼  teaspoon cumin
¼  teaspoon fresh ginger
¼  teaspoon garlic (optional)
peanut oil or mild vegetable oil to fill pan ¼” deep – add more to maintain level of oil

Directions

Grate sweet potatoes, onion and apple. Remove any excess moisture (can put in dish towel or cheesecloth and squeeze out moisture). Beat egg yolks and add, mixing well. Add milk. Add matzoh meal or flour and baking powder. Add spices, ginger, garlic and mix well. Whip egg whites until fluffy, and fold in gently.  Heat oil until hot and put large spoonful for each pancake. Cook until brown and flip once only.

Drain on paper towels.  Keep warm in 200 degree oven.

Make your own fruit chutney, or serve with spicy chutney, applesauce or sour cream.
