Marche Moderne – Costa Mesa

Marche Moderne always gets it right.  Had another delightful lunch there today.

Entrees included an eastern sea bass with black rice in a wonderfully flavorful sauce that included saffron, citrus, ginger and a myriad of other spices, all beautifully dancing with depth of flavor.  The other entree was “traditional” short ribs with onions, potatoes and mushrooms, served in a lovely little cast iron pot, in a sauce that must have taken hours to develop the flavor it had.  Just delicious!

Dessert was an apple tart – they are impeccable with this – a really flaky crust, perfect thin apple slices, served with whipped cream and Calvados infused ice cream and a drizzle of caramel.  I thought it was wonderful.  It had that quality that I like in apple desserts of “how much butter can we get into this and still have it hold together?”
